History and features of  Passito

Passito wine is a sweet wine obtained through the vinification of grape harvested later than normal grapes and dried. The bunches destined for the leavening are left on the screw for a longer period of time to allow the water to evaporate and the concentration of sugars in the aquarium is greater. Grape harvest for wine is made in October, rather than in August-September, but sometimes in November or December.
